{Fresh Strawberry Pie}

So after many requests for certain recepies I thought this would  be a place to share them with you all. This one is a summer favorite..specially when you get fresh strawberries even better!  You can also make a version adding blueberries,blackberries and rasberries..follow the same recepie just add these in too :)

So since we just picked fresh strawberries at the farm it was perfect timing!!

{Fresh Strawberry Pie}

1/2c boiling water

2 tbsp cornstarch

1/2C sugar

1/4 tsp salt

1 Quart Fresh Strawberries

1 Baked Pie Crust-COOLED {I make mine so I will put that recepie below)
Cool Whip to top

Rinse and dry strawberries
Hull our enough to cover the bottom of pie crust




Mush or Puree 1 cup of strawberries
In a saucepan Add all ingredients to the boiling water {including the Mashed Strawberries but not cool whip}
Mix until thickened..set aside and Cool

Top the Pie with cooled Mixture

At this point you can refrigerate it until you are ready to serve (no more than 24hrs though)

Top with Cool Whip and Enjoy!


{Flaky Pie Crust}

1 1/4 cups all-purpose flour

1/4 teaspoon salt

1/2 cup shortening, chilled

3 tablespoons ice water

Directions

1.Whisk the flour and salt together in a medium size bowl. With a pastry blender, cut in the cold shortening until the mixture resembles coarse crumbs. Drizzle 2 to 3 tablespoons ice water over flour. Toss mixture with a fork to moisten, adding more water a few drops at a time until the dough comes together.

2.Gently gather dough particles together into a ball. Wrap in plastic wrap, and chill for at least 30 minutes before rolling.

3.Roll out dough, and put in a pie plate. Fill with desired filling and bake
